Ymeat
The Nexus of Circular Economy in Waste Yeasts and Biotechnological Production of Alternative Meat
Ymeat is co-funded by the European Union and by the Free State of Saxony through the Sächsische Aufbaubank (SAB).
About the project Ymeat is a two-year research and development project, running from January 2026 to the end of 2027. In partnership with EPS biotechnology and the Czech Agrifood Research Center, Pacifico Biolabs is developing a fully circular, yeast-derived, mycelium-based flavour and binder system for meat alternatives. The project transforms by-products from breweries and wineries into cost-effective, next-generation functional proteins, built on a circular supply chain between Saxony and the Czech Republic.
Objectives
Upcycle and screen: Turn food-grade waste yeasts into functional ingredients and screen new strains for the best performance.
Scale to pilot: Combine the most promising strains and processes with our mycoprotein fermentation to build a meat-alternative prototype.
Bring to market: Assess nutrition, taste and shelf life, protect the IP, and prepare B2B market entry.
Ymeat will deliver a highly functional, cost-effective, and scalable clean-label binder platform to create new meat alternatives that meet consumer demands.
